Adventures in the Green House: The Whole Foods Cleanse

My family and I were SUPPOSED to do a 3 day whole foods cleanse this week.  We decided to put it off 1 more week for several reasons, the main 1 being that we were not AT ALL prepared for what we were about to do to our bodies.  It’s not that it was going to be anything like those hard-core cleanses or juicing, but still we needed to ramp our bodies down from our regular everyday habits so we wouldn’t kill each other. So since we put it off a week, we (meaning I) decided to use this week to gradually get us used to JUST whole foods, beans, and… and nothing…

3 Salads You May Not Have Considered Before

This post is inspired by my kiddos, 2 in particular – 1 asked with her head cocked “we’re going to have salad everyday?!” YES and is that a problem?  The other, our youngest, said this when he got his plate “Where’s the salad?  That’s not salad…. there’s no lettuce.  Where’s the lettuce?” So here’s the deal.  First things first… the key to having a “salad” is NOT the lettuce; it’s fresh ingredients (not including meat, of course) and a “dressing” of some sort.  And second….. I would eat salad CONSTANTLY if I could. Now that that’s out of the way, I’m giving you a few SALADS you may not have…

How To Make Easy Homemade Ketchup (& over 20 other restaurant quality sauces)

If you love to eat well (and maybe even love to cook), this post is for you.  I’m going to give you a recipe for delicious & easy ketchup and other sauces that you can customize to your taste.  All in 1 place;  trust me, you are gonna want to PIN this!  I’ll wait while you do that real quick… It has literally been YEARS since I have bought most condiments, spice blends, or sauces in a grocery store .  And that’s WITH a house full of kids and a hubby who THINK they love all those store bought flavors. It’s not because I don’t like them, but because most of…

Restaurant Quality Food (aka Better Than Store Bought)

I’ve said it before, I like to cook because I love to EAT. And because more often than not, I am highly disappointed in what I get for my money when we go out to eat (or when someone around here inadvertently buys something prepackaged).  $12 salads using Iceberg lettuce (that has no nutritional value and tastes like water), add guacamole or plain avocado to anything for no less than an EXTRA $6 (when I can buy an avocado on sale for $0.33 each, $0.59 otherwise), bacon for an EXTRA $2, and if I want meat… FORGET IT!  I might as well just go grocery shopping. So most of the time…

    Dinnertime just got easier… Maybe

Everyone knows I like to cook, not for the sake of cooking itself, but because I like to EAT.  So I usually cook 2-3 times a day, even when it’s just me. Well a couple of weeks ago, my littlest (3-year-old) asked to help me cook dinner and whaddaya know…. he’s a natural-born sous chef!  Granted my nerves could only stand for him helping me make salad, but boy did he help me make a MEAN salad! I won’t let him cut anything just yet (even with kitchen scissors), but turns out he’s great at washing fresh fruits and veggies, and shaking up a tasty vinaigrette.  And he assembles a…

    Healthy & Delicious Greek Meal

On a recent lunch trip to Panera Bread, I disappointed in the very loose interpretation of a Greek salad.  You can’t just throw feta cheese on a bed of romaine and call it Greek.  Well, I guess technically you could since those items originate in Greece, but that’s just not the end of it.  I really like Panera, but this was my first time having their “Greek” salad and it left me wanting to eat a jar of kalamata olives.  That’s right, I said a JAR.  That’s because I love olives of all kinds and when I have a Greek or Mediterranean salad, I expect to have some. Fast forward…

Zucchini Parmesan Crisps Recipe (Food Network)

For the last 2 or 3 weeks, we have been missing “meatless Monday”.  It’s been more like meatless Wednesday or Thursday.  Regardless, we still have to get those veggies in and since I’m always experimenting with new ways to introduce them (or new techniques for old favorites), I had to post this little gem.  I found this recipe by “accident” – you know those sidebars that show up on sites when you’re looking for something else?  Yah, this is one of those. Zucchini Parmesan Crisps Recipe : Ellie Krieger : Recipes : Food Network.  Honestly, I was really skeptical of this one.  I like zucchini, but chips/crisps?!  YES, ZUCCHINI CHIPS!  And they…

    Spice Blends

In my quest to  go green, spend less, save more, and know/control what’s going into my food, I decided that I’m not too cool with all the “stuff” in the spices I buy that are unnecessary additives.  This had nothing to do with all the super cute choices for spice jars on the market now…. Okay truth, it had just a little bit to do with that too (rolling eyes). I mean really… which looks better, the 1st one or the 2nd one?  I LOVE the 2nd (and not just because it is actually a better snap) and THIS is what I am striving for.  More on that in another post… The…

How in the heck do you mess up BOILED EGGS?!

Let me just TELL you!  My oldest thought he could boil eggs faster (i.e. in 5 minutes) simply by boiling with the lid on THE ENTIRE TIME.  Needless to say, after five minutes of boiling his 3 eggs, he cracked into a jiggly mess with a COMPLETELY runny yolk!  Gross and hilarious at the same time. “I don’t understand” he said.  “It just makes sense that this should have worked.”  No dice kiddo.  THIS is how you make boiled eggs:  put the eggs in the pot, add water to cover, BTB (bring to boil), then turn off the burner and pop the top on the pot for about 15 minutes.…

    Mashed “Potatoes”?

I am always looking for ways to get more veggies into our diets.  We eat pretty healthy most of the time but can you really ever eat to many veggies?  It’s possible I guess, but I’ve never met anyone who does. I don’t have particularly particular children, but a couple of them DO ask a million questions like “what’s this?”, “what’s in it?” then proceed to smell things, pick it apart with the forks, etc, etc.  (So I guess those 2 are picky, but hey 50/50 ain’t too shabby).  Anyway since I am quite the old school mama, I usually end up saying “JUST EAT” and rolling my eyes!  (Dinnertime…
