Today I really wanted a salad but didn’t have any baby greens, lettuce or cabbage on hand. I did have 2 zucchinis that I needed to use before they went bad. So I decided to make a zucchini noodle salad – no cooking involved.
For this recipe, I’m going to spiralize some fresh zucchini and simply add any veggies or toppings I have a taste for. If you don’t have a spiralizer, no problem. Don’t go and invest in one. Just slice the the zucchini up like you would a cucumber.

Like any other salad, you can add whatever you have a taste for. Today I was feeling a little Mediterranean flavor so I added Roma tomatoes, 3 types of olives, onions, and topped with shrimp.
