Tabouli (Tabbouleh) Salad can be served hot, cold or room temp. None of the ingredients spoil quickly & it is very nutritious.Tonight we had it with our favorite seared fresh salmon, tomorrow we can eat it with eggs & avocado for breakfast, and as a salad for lunch (maybe with some tuna).Traditionally tabbouleh is made with bulgur & parsley. But I never have bulgur on hand (who does?) so I make it with couscous or quinoa.
And of course I gave it a southern twist with fresh collard greens & cilantro from the garden.Would also be great with amaranth/callaloo, spinach, kale or any leafy green. Think outside the box & work with seasonal & regional veg.Best part... This is full of flavor with no added salt or pepper. The veg & aromatics give it all the flavor it needs.Interested in my recipe? Lemme know in the comments...

A month ago, I set a goal. I'm halfway there. I'm a work in progress. And thank God that I am always IN progress!The goal was/is to tap into my own strength & gain balance. In life. In my body. In my relationships. In my career. In our family business. In my (& my family's) future.It all started with strength & balance within myself.
2022 is behind us, and honestly... it was A LOT.All that matters is what we learned from it.
I learned that setting boundaries & sticking to them takes STRENGTH. And that strength leads to a lifestyle BALANCE that is SO freeing. That freedom brings an amazingly unexpected PEACE.In the best of times & the worst of times... Romans 8:28Moving into 2023 like...........

Only on the roofline though.We've already disconnected the lights on the "Christmas trees" in the front yard but I really love the lights along the house. Especially with the spotlights.
