Anytime I cook rice, I almost always have a ton leftovers. It’s never an issue though because it just so happens we love fried rice. Any kind of fried rice. Since we also love Cajun food I thought I’d combine the 2 for a little cultural twist I’m calling Cajun Fried Rice.
Fried rice is so great because it’s completely customizable and everyone loves it. At it’s most basic, it is literally plain rice that has been fried in a non stick pan or wok – with or without egg. I’ve even made a version with grilled fruit!
In this version, I am using items you’d normally find in a classic jambalaya. You could add more or leave some out. Again, that’s the great thing about fried rice – make it your own according to your tastes.
Cajun Fried Rice Ingredients
Disclaimer… I’m Southern, I measure nothing.
- Leftover (or not) long grain rice
- Thinly sliced cabbage
- Thinly sliced carrots or carrots sticks
- Thinly sliced onions, garlic, & ginger
- Fresh peppers – bell & cayenne (optional)
- Diced sausage
- Small shrimp (or large cut to size) or crawfish
- 1 egg whipped with soy sauce
Pulling It All Together
Brown the sausage in a wok or non-stick pan.
Remove & set aside.
Add all of the veg to the same pan & quickly sauté.
Add the rice & stir to combine.
Throw the sausage back in along with the shrimp, stir to combine & cook until shrimp barely turns pink.
Make a hole in the middle of the pan, add the egg & soy sauce mixture. Quickly stir into the rice mixture until everything is combined. Watch it come together in the video below.
