    Gluten Free Vegan Lo Mein

    Not that we are either gluten free OR Vegan in the Green House.  Yes we eat pretty well, but we are definitely not that good.  Sometimes we just need to press reset on our diets/eating habits & this gluten free vegan lo mein is a perfectly tasty way to do it!     Eat Well to Live Well

    The summer is over & so are the excuses.  In the Green home we eat well to live well but this summer we fell off the wagon – some harder than others.  There was so much junk food to be had, birthdays full of sweets (at least they were mostly homemade) and donuts & kolaches at every chance.     Vegetarian Zucchini Boats

    I recently cooked for several girlfriends on a birthday trip and, as usual, I bought way too much food.  One of the items I made was steak & veggie kabobs.  They were a hit, but I had several squashes & zucchini that I didn’t even use. I really like eggplant, squash, & zucchini but they can be tricky.  They have a high water content, need to be seasoned just right, & a lot of people don’t like the texture.  I normally just slice them & saute with sliced onions, salt & pepper and the family enjoys that.  I’ve also been know to stuff an eggplant with a similar mixture.     For some time now, I have made it a point to have at least 1 meatless day per week at the Green house. To make it easy, I stuck to Meatless Monday.     Homemade Vegetable Broth

    I cut up all these vegetables to prep meals for the week – onions, bell pepper, celery, garlic, carrots, zucchini & 2 types of squash plus some cilantro ends from the salsa I made. Normally I would throw all of this into the compost pile, but not today – not yet.  Today I am throwing all of these “scraps” into a post of {filtered} water first to make homemade vegetable broth.  THEN they’ll go into to compost pile.     Super Simple Soft Sugar Cookie Recipe

    I stopped buying cookies years ago and things have to get pretty desperate for us to reach for a package of Chips Ahoy or Oreos, although I’ll admit that sometimes my oldest just has to have Oreos.  Maybe 1 day I’ll try my hand at those.
