Some nights you just don’t feel like cooking.  Every now and then, the thought of turning on the oven or standing over the stove makes my stomach churn.  And that’s when I’m glad I have enough leftovers for the family… everyone but myself, that is.  And since I don’t want to cook OR ask my DH to do it, my options are limited.  Maybe.

Good thing I love veggies and could live my entire life off salad – so many salad options, so little time!  On this night, though, I really wasn’t too interested – plus I didn’t have any lettuce.  No dice.

I had been eyeing some avocados all day.  I’m sure I had a plan for them, probably something to do with breakfast or smoothies or something.  Shruggs.  Well plans change so… suit up avocados!  It’s time for you to be the star in…

The Green Goddess – The Sandwich for the… Goddess!

I’m sure there’s some sort of formula for properly building a Green Goddess Sandwich, but that’s not happening.  I’m doing what I like and it’s about to go down!

My mouth is watering just thinking about it!  I sliced up:

1 roma tomato
1/2 peeled cucumber
1/4 red onion (thin slices – 1/8 setting on my mandolin)

Normally I would add lettuce, spinach, or kale to this but in case you missed it, I didn’t have any on hand.  Moving on…

I set those aside on a plate and added salt and fresh ground pepper to taste.  I let it sit there and “marinate” (kinda) while I did other stuff.  Okay, I have to be honest… I always have to cut extra everything because I have a real problem with eating everything that I prep.  Yes, including onions – don’t judge!  Anyway, that’s why my ingredient plate is looking so sparse.  There, my secret’s out and I feel soooo much better!

When I was ready for my sammy, I lightly toasted sandwich thins then rubbed them with cut garlic and drizzled them with balsamic vinaigrette.  OMG – YUM!

Slice up that avocado (or 2 because I KNOW I can’t eat just 1) and start layering.  In any order.  For me it doesn’t even matter at this point – I’m just glad everything made it to the sandwich before I ate it all!  I added more red onion because I like it like that and a little extra balsamic vinaigrette to top it off.

If you love (or even just like) avocados, this sandwich is the bizness.  Who needs meat?!  I could live off this stuff!  Well, this and SALAD!
