The best thing about making your own sauce is that it’s completely customizable because YOU control the ingredients. This recipe is just the beginning! Tips to follow on other flavors you can add.

Basic Ingredients:

  • 1/4 cup mayonnaise
  • 2t vinegar
  • 1/2 of a medium onion, finely chopped
  • 1 clove of garlic, minced
  • tabasco sauce (or hot sauce) to taste (optional)

The process:

  • Combine all the ingredients in a small bowl.
  • Whisk until thoroughly combined

1. Smoke the onions & garlic
You can do this in the oven at 275°- 300° for about 10 minutes, just until soft.
Or on the stovetop. Sauté over medium low heat until translucent.
Let them cool then chop & add to the sauce.

2. Add extra seasoning(s)

3. Play with your food 😉
Try different ingredients to get the flavor profile you prefer. A few options are:

  1. chopped pickles (for tang) or relish (for a little sweetness)
  2. various vinegars – I like ACV. You could try white or red wine vinegar too. Even rice vinegar for an Asian flair.
  3. speaking of Asian, try horseradish or sriracha in place of the hot sauce.
  4. go Italian with anchovies, capers, or chopped olives. (Mmmm… puttanesca anyone?
