Spicy Tuna Bruschetta Bites!

This past weekend I had a bridal shower to coordinate.  This time, beyond the decorations, I prepared most of the food.  One of the menu items was classic Bruschetta Bites – you know… the standard rub with garlic, sprinkle with olive oil, top with tomato, basil, maybe a little cheese and another drizzle of olive oil.  YUM!

When I was shopping for the food I found these little cuties ON SALE at World Market (one of my faves).  They were $0.90!  I bought every last box!  Anyway, I knew I’d have way too many for the shower but I was just fine with that!

 

What I did not anticipate was having lots of tomatoes left, especially since I had to use them in the salad too (AND because the ladies devoured those bites!).  I really didn’t buy too much of those because I figured there are people who don’t really like tomatoes.  But still there were LOTS and I had to find something to do with all of them.  We weren’t in the mood for soup – I made chunky tomato basil last week – and I wasn’t really feeling pasta.

Then there was salad dressing – my basic olive oil and red wine vinaigrette.  I always make “too much” of that because inevitably people want more even if the salad is already dressed.

Tuna came into the equation because, long story short, the hubby and I had to prove a theory about the can opener (don’t ask) and all we have in cans to test it on is… you guessed it… tuna.

So I had 3 things to try to use in 1 afternoon.  And LOTS of super cute mini toast!

The solution was simple enough – combine them all!  Here’s all I did…

  • 1 can tuna in water, drained and broken up
  • onion, diced small (to your taste)
  • tomatoes, diced small (to your taste)
  • sriracha (or hot sauce if you prefer, optional)
  • vinaigrette (to your taste)
  • extra olive oil for drizzling
  • parsley or basil, chopped
  • mini toast (or any crusty bread, cut into bite sized pieces)

Put everything (except the evoo for drizzling) in a bowl and stir to combine.  Add vinaigrette and/or more olive oil to get the desired consistency.  Drizzle the mini toast with olive oil and top with the tuna mixture.  Drizzle a little olive oil if you want. And done!

My littlest ate the entire first platter I made.  Ok I lie – all but 3.  When I made a second platter just for the hubby, he cried… so he ended up eating some of that batch too!  They were pretty great!

Since there’s no dairy in them, they don’t have to be refrigerated at all.  There’s no cooking involved and no need to keep things warm. As far as fuss free food goes, these are pretty close to PERFECT.  They would be great for snacking, parties, tailgating, picnics or anything really.  Try them, put your own spin on them, savor them! Mmmmm.
